 Rustic Vegetable with Buckwheat & Basil

This recipe makes great use of the humble buckwheat. Native to Northern Europe and Central Asia, buckwheat has been nourishing us humans since at least the 10th Century. It was introduced to America by the Dutch in the 17th Century.

 

It plays an important role in many traditional cuisines, most notably France with their magnifique buckwheat crêpes: 'galette bretonne'!

 

Buckwheat is sometimes mistaken as a cereal grain. IT'S NOT WHEAT! Who named it? Own up.

 

It is actually a fruit seed related to the rhubarb and sorrel family. This means it make a great substitute for those sensitive to wheat or gluten.

 

Buckwheat is also great for lowering high cholesterol and blood pressure. This also promotes better level of blood sugar, reducing the risk of diabetes.

 

The mighty buckwheat is a nutritional powerhouse, being about 70% carbohydrate with a high content of fibre, protein, minerals and vitamins B1 and B2. What a great seed! Shame about the name.

 

MICROWAVE (850W Cat.E): Remove lid and rest it loosely on top. Heat for 5 minutes on full power, stirring halfway through. Allow to stand for 1 minute.

HOB: Empty contents into a saucepan. Warm on a medium heat, stirring occasionally, until piping hot.
