Warming Winter Apple & Cinnamon Porridge

The weather has finally turned, and the mornings are cold and crisp. To get us warmed up and ready for the day we always turn for a warming bowl of porridge oats. 

Sometimes the simplest recipes are the best, and this one has a seasonal apple and cinnamon twist. Add a swirl of almond butter, a little maple syrup and finish with nuts.

Ingredients:

1 cup of rolled oats

3 medium apples cored and sliced into chunks. 

4 cups of water

A pinch of salt

Maple syrup to taste

Option Toppings: Nut butter, cinnamon, toasted nuts and or seeds, fresh fruit, dried cranberries. 

Method: 

Heat a large pan over a medium heat, then add the oats and cook until fragrant, stirring often.

Add the apple chunks, water and salt. Stir to combine and bring the heat to high and let the mixture simmer. Once simmering, lower the heat and allow to cook for about 35 minutes until almost all the liquid has been absorbed and the oats are creamy. Stir every 5 minutes. 

Remove from the heat and allow to cool before adding maple syrup. 

Divide into bowls and add your toppings. 

You ca save any leftovers in the fridge for up to 4 days, and heat it back up in the microwave.
